A perfect dish for a cool Autumn evening, this is my mother and fathers version of fish chowder.

Ingredients

  • 3-4 medium potatoes, diced
  • 1 medium yellow onion
  • 1 pound Haddock, cut in small cubes (easier to cut if still mildly frozen)
  • 1 can minced clams
  • 1 can Snows clam chowder condensed
  • 1 can Snows clam chowder (not condensed)
  • I can evaporated milk
  • ½ cup heavy cream
  • ½ cup water
  • 2 tablespoons butter
  • Salt and Pepper to taste

Directions

Set crockpot to high temperature and add the water.
Add in the onion and potato, a little salt and pepper and butter and leave on high for about two hours or until potatos are soft.
(Be careful that you do not have too much water. It should just cover the potatos and onion.)
Next, add chunks of fish and minced clams and turn crockpot down to low and let simmer until fish is cooked. (About one hour)
Add in cans of Snows clam chowder and let simmer on low for about three hours..
About one hour before serving add the evaporated milk and cream, salt and pepper and a little more buttor. (Optional)
Simmer on low for one hour and serve.
